Jack O Lantern Vegan Stuffed Peppers

I’m not a huge stuffed peppers girl, but I just have to make these jack o lantern vegan stuffed peppers during spooky season every single year!

Of course, you can make at any time regularly if you are a fan, no matter what, they are absolutely delish.

It may be mid August, but a lot of us are already getting into it! So let’s start the season off with this meal.

Jack O Lantern Vegan Stuffed Peppers

Super easy to make gluten free and of course vegan.

YOU WILL NEED:
– Bell peppers
– Vegan ground meat of your choice (I prefer Impossible)
– Reg noodles or GF noodles of choice
– Plant milk of choice
– Vegan cheddar cheese shreds
– Optional vegan cream cheese for thicker cheese sauce
-Seasonings of choice
– Vegan plant butter
– Any veggies you may want to add to the mixture

Basically, all you need to do is get orange, yellow, or both bell peppers. Cut off the tops and scoop out the inside, before carefully carving jack o lantern faces into them!

In the meantime, boil your pasta and pan cook your vegan ground meat. Feel free to add veggies you want to cook and add in as well!

Then, prepare your cheese sauce. I honestly usually just start with melting butter, adding plant milk, vegan cheeses, and boil until you like the consistency.
Add any spices and then mix in the noodles and vegan grounds.

Place your peppers top off in a baking dish, and fill them with your mixture, then close them with the tops.

Bake in the oven until the peppers are tender and done – for about 15-20 minutes. (You can also blanch them for a few minutes to soften them before stuffing if you’d like)

Then you are done! Your adorable jack o lanterns are ready to eat. 🎃💀🖤
