My eating has changed a ton in the recent months, and now in addition to being vegan, I’m now gluten free as well.
Combine that with the desire to simplify and streamline my meals came the idea to start meal prepping!
So, gluten free vegan meal prep ideas have been big in the works here.

This will be the first food themed post on the blog so far I believe, so it’s exciting!
I’m not the most creative with food, but I do like simple, easy, healthy, and of course tasty food. I’m a simple vegan foodie I suppose.
So that being said, this is what I’ve come up with so far, about 4 weeks in.
I definitely am having good feelings about it, and it makes lunches so much easier, saves me so much time, and makes sure I get a great delicious and nutritious meal in.
Also, the glass meal prep containers have been a total gamechanger and I highly recommend them by the way! I’ll link them here if you are interested.
I absolutely love them. They really help to level up the meal prep vibe.

Now On To The Gluten Free Vegan Meal Prep Ideas ♡
BBQ Tofu “chickn” with roasted potatoes and green beans, topped with vegan garlic parm butter “sauce”.
For the tofu, as always use either firm or extra firm tofu, frozen and thawed. Toss in spices and cornstartch. Bake on pan or fry in skillet, then toss in vegan BBQ sauce (I use Sweet Baby Ray’s original).
For the garlic parm butter sauce, melt vegan butter, garlic (I use from a jar), vegan parmesan (I use Follow Your Heart shake parm), and parsley. Drizzle over beans and potatoes.
Japanese BBQ stir fry tofu with veggies & rice
This was made with Jasmine rice, twice frozen and thawed silken tofu, boiled broccoli and carrots.
Sauce is Bachans sauce! A favorite for sure.
Tofu Buffalo “Chickn” Meals
Silken tofu frozen and thawed twice, gently pressed, coated with corn startch and seasonings, pan fried.
Tossed in Frank’s mild buffalo sauce, and a bit of bbq sauce.
Put over cubed potatoes and rice just to get some different vibes during the week. Cut and boiled broccoli on the side.
Buffalo cheese sauce poured over all (vegan butter, oat milk, Aldi vegan shreds, more buffalo sauce)
Delish!
Green curry with coconut crusted tofu
Green curry sauce (Green curry paste, coconut milk, garlic, onion and ginger if desired), zoodles (zucchini sliced into noodles), broccoli, spinach. Twice frozen and thawed (for texture) silken tofu, lightly seasoned, and breaded with cornstarch and coconut flakes. Pan fried in avocado oil. Jasmine rice on the side.

Freeze and thaw the tofu for the perfect texture for this meal!
Topped with vegan plant butter.

BBQ tofu “chicken” with Jasmine rice, sauteed bell peppers, and green beans! Vegan ranch with the BBQ tofu and vegan butter topping the rest.
*TIP* Make sure you freeze and thaw method the tofu! For a delicious meaty like texture.
Quinoa and Veggies
Told you they were simple!
For this one I literally just have quinoa topped with sauteed veggies (bell peppers and zucchini).
I sauteed with Country Crock plant butter and some garlic.
On the side is a sweet potato, which I also topped with the plant butter.
Taco Bowls
I just layered jasmine rice, Beyond meat with taco seasoning, vegan queso melted cheese, Country Crock buttered corn, chopped tomato, and lettuce.
I didn’t have anything on the side this time due to time during busy Thanksgiving week, but I would have put a potato again likely.
Delicious, perfect taco bowl with no chips, and no gluten!
Tuscan Sauce w/ Vegan Meatballs
I just cooked up vegan Beyond meatballs, sauteed veggies again (bell peppers, zucchini, and spinach), and made a delicious Tuscan style cheese sauce (garlic/vegan butter start, tomato paste, plant milk, Italian seasonings, Violife parm cheese block).
Also paired with a sweet potato to keep simple.
This is a new journey so I will keep this post updated as I go along!
